Raw Vanilla Apricot Donut Holes

 1 tbsp refined coconut oil
 4 tbsp coconut butter (coconut mana)
 2 tbsp maple (can omit or reduce if you’d like a less sweet treat)
 2 tbsp apricot jam
 2 tbsp chia seeds
 11 dried apricots, finely chopped
 2 tbsp unsweetened shredded coconut
 1 cup oat flour – use certified gluten free if needed
For the Glaze
 1 tbsp refined coconut oil
 2 tbsp coconut butter (coconut mana)
 2 tbsp apricot jam

In a small bowl, warm coconut oil, coconut butter, maple, and apricot jam in the microwave until just soft enough to mix together with no clumps (about 40 seconds).

Next, add chia seeds and warm again for another 30 seconds.

Then, add the dried, chopped apricots, shredded coconut and oat flour and mix to incorporate evenly.

Form the dough into 10 balls, each the size of a heaping tablespoon. Then, place the balls on a plate and leave it in the freezer for 30 minutes. Go distract yourself while you wait 😀

After 30 minutes, make the glaze by warming all the ingredients in the microwave (about 40 seconds). Stir together with a fork until no clumps remain.

Drizzle the warm glaze over the frozen donut holes with a spoon. Place the frosted donut holes back in the freezer for another 30 minutes.

Store the donut holes in an airtight container in the fridge for up to one week or in the freezer for up to two months.
