Crisp Apple Cabbage Slaw

raw / vegan / gluten-free

Crunchy, tangy, and slightly sweet–this light and crisp apple cabbage slaw is not your average cream-smothered affair. Its light and fresh and has had everyone coming back for seconds! It’s the perfect crunchy complement to veggie burgers (I like Morning Star), BBQ tempeh, or my soul-warming creamy red lentils. And, of course, it’s also 100% vegan. No eggs and no dairy.

This slaw is also incredibly easy to make. It requires just one knife, one cutting board, and one bowl. It pretty much doesn’t get more minimal, and this recipe pretty much saved my life during grad school when I’d come home starving. I’d heat up some of my red lentils, make this 10 minute slaw, and be eating faster than takeout could arrive.

These days, I love it for long drive days when you’ll find me throwing it together in the trailer’s tiny kitchen… on the side of the highway (hopefully with a good view!).

Crisp Apple Cabbage Slaw

Ingredients
 600 g red cabbage (about 1 large head of cabbage)
 300 g crisp variety apple such as fuji, honeycrisp, or envy (about 2 medium apples)
 1 tsp cinnamon
 ¼ cup fresh cilantro
 60 g raisins (1/3 cup raisins)
 2 tbsp maple syrup (slowly add up to 2 Tablespoons more if more sweetness is desired)
 ¼ cup fresh lime juice

Preparation

Set out a large salad bowl, and shred the purple cabbage into it using the side of a box grater with the largest holes or a sharp knife.

Next, finely dice the two apples into the bowl. Note that you can simply grate the apples into the bowl, but the result will be a softer, less crunchy slaw.

Now chop the herbs and add them to the bowl along with the raisins and cinnamon.

Mix the cabbage, apples, herbs, raisins, and cinnamon to incorporate. If you’d like to prepare this dish in advance, you can stop here and store the slaw overnight in the refrigerator covered.

Just before serving, drizzle the maple syrup and lime juice over the whole mixture, one at a time. Mix well to spread the liquids evenly throughout the slaw.
