Sweet & Simple “Go-To” Kale Salad
This kale salad is a classic around here. Lightly sweet and full of texture and flavor, it pairs well with basically everything.
Serve it with tempeh steaks, tuscan butter beans, cozy red lentils, or a protein of your choice 🙂
The key to taking kale from a tough veggie to a mouthwatering morsel comes down to one thing: massaging the dressing into your kale!
Seriously, spend a little time lavishing some love on your veggies here. It feels over the top, but I promise it makes all the difference and is essential to making raw kale taste good. Massaging the kale with the dressing makes the leaves deliciously tender. Then just add your apples, raisins, cherries, and walnuts and voila!
Wash the kale thoroughly and set aside in the colander.
Make the dressing in the bottom of your salad bowl by whisking together honey, olive oil, lemon juice, salt, and cinnamon.
Add the kale into the salad bowl and massage the kale for two to three minutes or until the dressing has made the leaves somewhat soft and the kale has been reduced in size by about a third. Don’t massage for too long though or you will destroy all the fibers in the kale and it will become overly soft. Taste a little piece of the kale every so often until you reach a consistency you enjoy.
Add the finely diced apple, chopped walnuts, raisins, and cherries. Toss together lightly.

- 3 cups (200 grams) kale, de-stemmed and shredded into bite sized pieces
- 1 medium apple, finely diced
- 3 Tablespoons (30 grams) raisins
- 2 Tablespoons (20 grams) dried cherries (if you don’t have any, just omit them)
- 1/4 cup (30 grams) walnuts, roughly chopped
- scant 1 Tablespoon (20 grams) raw honey
- 1 teaspoon (4.5 grams) extra virgin olive oil
- 2 teaspoons (10 grams) lemon juice
- 2 teaspoons cinnamon
- .5 teaspoons salt
